Cooking with Chef Wells: Summer Succotash

Join us on the first Friday of every month from 12–1 PM at the Fairfax Market Café, where Chef Wells creates a new seasonal dish using the freshest ingredients from Fairfax Market. Stop by, sample the flavors, and get inspired!

Ingredients:

  • 4 bacon strips

  • 2 tablespoons olive oil

  • 1 medium sweet onion, diced

  • 1 red bell pepper

  • 3 cloves garlic, minced

  • 1 cup canned chicken broth

  • 1 16oz. package frozen baby lima beans

  • 2 cups sliced okra

  • 3 cups canned sweet corn

  • 1 pint cherry tomatoes, halved

  • 2 tablespoons apple cider vinegar

  • Kosher salt

  • Fresh cracked black pepper

Instructions

  • Heat a large skillet over medium heat. Add bacon strips and fry until bacon is crisp. Remove and set aside on a plate lined with paper towels to drain.

  • Add olive oil to the skillet over medium heat. When oil is hot, add onion and peppers. Sauté until onions are translucent, about 3 minutes. Add garlic and continue sauteing for about 30 seconds.

  • Add broth and lima beans to skillet and bring liquid to a boil. Cover. Cook lima beans for 8-10 minutes, or until cooked through, but not mushy. Add okra and continue cooking, covered, until liquid slightly thickens.

  • Add corn and continue cooking down as the mixture thickens. Fold in tomatoes and apple cider vinegar. Crumble bacon and add to the succotash. Remove skillet from the heat and season with salt and pepper to taste. Serve warm.
