Black Bean and Corn Salsa
Ingredients:
15 ounce can low-sodium black beans
11 ounce can sweet corn
1 red bell pepper, diced
½ red onion, chopped
1 jalapeno pepper, minced
½ teaspoon garlic powder
1 teaspoon Kosher salt
3 tablespoons lime juice
2 tablespoons olive oil
½ cup cilantro, chopped
STEPS:
1.) Rinse beans in a colander and set aside.
2.) In a large bowl, combine beans, corn, red bell pepper, red onion, jalapeno. Garlic powder, salt, lime juice, olive oil and cilantro. Mix well. Cover with plastic wrap and rest for about 30 minutes to allow flavors to meld together.
3.) Serve with your chip of choice or add as a topping to your favorite dish!
Spicy Guacamole
Ingredients:
6 avocados
½ cup white onions, diced
¼ cup cilantro, chopped fine
1 jalapeno, minced
¼ cup fresh lime juice
1 tablespoon kosher salt, plus more if needed
STEPS:
1.) Peel avocados, discarding the pit.
2.) Place the avocado flesh in a large bowl. Add onions, cilantro, jalapeno, lime juice and 1 tablespoon of kosher salt.
3.) Using a potato masher, combine the ingredients. Taste, and adjust seasoning. Cover guacamole with plastic wrap and place bowl in refrigerator.
4.) Serve with your chip of choice or add as a topping to your favorite dish!
Pico De Gallo
Ingredients:
1 ½ lbs. tomatoes, diced
½ red onion, diced
1 jalapeno pepper, seeded and minced
½ cup cilantro, chopped
¼ cup lime juice
Salt, to taste
Pinch black pepper
STEPS:
1.) In a medium bowl, combine tomatoes, onions, jalapeno and cilantro .
2.) Stir in lime juice and season with salt and pepper to taste.
3.) Serve with your chip of choice or add as a topping to your favorite dish
