Before You Start
Want to take your Chicken Lollipops to the next level? Here are a few pro tips from Jake Fludd III to help you cook like a pitmaster:
Use kitchen shears instead of a knife—trimming the drumsticks is quicker, cleaner, and way easier.
Stand the lollipops upright on the grill to ensure they cook evenly all the way around.
Don’t be afraid to experiment! Try different seasonings or sauces to make the recipe your own and keep things fresh.
Ingredients
Chicken legs/drumsticks
BBQ seasoning of your choice (We used G Hughes Sugar-Free BBQ Seasoning, but Salt, Pepper, and Garlic Powder also work great)
5Fludds Sauce (or your favorite BBQ sauce)
Tools Needed
Kitchen shears (preferred) or a sharp knife
Non-stick aluminum foil (optional)
Instructions
Prep the Drumsticks:
Clean your drumsticks thoroughly.
Starting at the bottom (thin end) of the leg, use kitchen shears or a sharp knife to cut around the bone in a circular motion. Cut through the skin and separate the tendons, keeping the bone intact.
Push the meat upward toward the thicker, top end of the bone to form a "lollipop" shape. You may need to keep adjusting the meat throughout this process.
Remove any remaining skin and cartilage from the bottom joint of the leg.
Trim any visible tendons with kitchen shears for a clean finish.
To help the lollipop stand upright (which helps with even cooking), level the meat side by trimming away excess cartilage or uneven sections.
Season & Cook:
7. Generously season the meat with your chosen BBQ seasoning.
8. Preheat your grill to medium heat. Place the lollipops meat-side down on the grill. Using non-stick aluminum foil underneath can help prevent sticking at the start.
9. Grill the lollipops until they are almost fully cooked, turning occasionally for even grilling. Once nearly done, remove the foil if used.
10. Brush the lollipops with 5Fludds Sauce or your preferred BBQ sauce.
11. Leave the lollipops on the grill for an additional 1 minute to allow the sauce to set and caramelize slightly.
Serve & Enjoy:
12. Remove from the grill, let cool slightly, serve, and enjoy your 5Fludds BBQ Chicken Lollipops!
